Let's make some Beef Jerky!

So I got a new dehydrator... time to play! Time to see if I can make some banana chips! So Slice up the bananas and set the heat and time

and leave it alone for that time. And I learned... don't do this on a humid day... they never dry! But the whole reason I have this machine is to make jerkey!

I cut flank steak into less than 1/4 in strips and marinate them in BBQ or liquid smoke for 12 hours They are pretty juicy after that! I put them out and blot them dry...

Then on to the trays to dehydrate... yummy yummy! 2 1/2 lbs of steak makes 5 trays.

This is the hottest it gets... for at least 10 hours (maybe 12) Cooling down before storage. Notice that I sampled quite a few during the process...

(Had to make sure they were cooking!) <grin> Then into little baggies for storage... They don't seem to last long for some reason....
